Happy Halloween!!

It's Halloween today!! Doubting we will have any trick-or-treater's tonight but I am ready just in case!

Please be careful if you are driving around tonight, watch for excited kids!!

If you are out partying, please don't drink and drive.... no costume makes you invincible.

Banana bread pudding

At work we always seem to have bananas in need of being used or else they will go bad. Banana bread doesn't use enough bananas per loaf, and can be time consuming to make in large batches. I decided to look for other uses of bananas and came across this recipe for banana bread pudding! It's a great way to use bananas and bread that's getting old. I add more bananas then the recipe calls for, and I've made it with white bread and raisin bread the second time. It's always a hit with the diners and staff at work!

MAKES:6 servings

Ingredients

  • 4 cups cubed day-old French or sourdough bread (1-in. pieces)
  • 1/4 cup butter, melted
  • Eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup sliced firm bananas (1/4-inch pieces)
  • SAUCE:
  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 3/4 cup milk
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract

Directions

  1. Place the bread cubes in a greased 2-qt. casserole; pour butter over and toss to coat. In a medium bowl, lightly beat eggs; add milk, sugar, vanilla, cinnamon, nutmeg and salt. Stir in bananas.
  2. Pour over bread cubes and stir to coat. Bake, uncovered, at 375° for 40 minutes or until a knife inserted near the center comes out clean.
  3. Meanwhile, for sauce, melt butter in a small saucepan. Combine sugar and cornstarch; add to butter. Stir in milk and corn syrup. Cook and stir over medium heat until the mixture comes to a full boil. Boil for 1 minute. Remove from the heat; stir in the vanilla. Serve warm sauce over warm pudding. Yield: 6 servings

UpDates

For some reason I can't seem to stay caught up on blogging. I'm thinking it's because I now use my iPhone more then I use the computer. I stay up to date on fellow blogs, but when it comes to blogging I'm needing to work on it.

This upcoming week is going to be busy for me! I have Monday/Tuesday off. Monday is Thanksgiving here in Canada, and with Hubs working nights we won't be having a turkey dinner. A good friend from work's husband is sailing until December and she mentioned how she was going out for dinner on her own Monday. So I said we should make a day of it, go shopping and then have dinner. So that's our plan!

Tuesday Hubs and I have the day off together so I'm sure we will get into some kind of trouble! Most likely we will be getting the last few things we need for our next trip!

Friday night I'm going to be working an official function at work, which means 8 hrs of overtime for me!!! Not only do I get overtime pay for the Thanksgiving stat, but overtime for this function as well!!!

Yes, you read that right. Hubs and I booked another vacation for this fall. No, not Mexico this time, but rather the Dominican Republic. We have never been and found a great deal so we couldn't pass it up. When we get back, I will post the name of the resort and a full review of the D.R. and the resort itself.

It's October!

Today marks October 1st! Fall is definitely here with the cooler temperatures being here more days then not. We've also had lots of rain lately. I also enjoyed my first pumpkin spice latte of the season the other day.

Hubs and I are still debating whether or not we want to go on a trip this fall (I know it sounds shocking doesn't it). We are waiting to see what the prices do closer to the time we would like to go.

My sister is busy with school and my brother is as well. I've also been busy applying for jobs, with one company quite interested!

I bought a new purse yesterday! My old purse was starting to wear out (the material is cracking) and so I started the new purse search. I began looking in every store I went to. Finding a new purse is hard. I wanted something a little more professional and adult (without the studs and flashy metal zipper pulls), and something that would last. I also needed one with at least 1 outer pocket for quick access to things like bus tickets, hair elastics, etc, a cell phone holder, a place for keys, and an inside hidden pocket. I wasn't having much luck until I went to winners. I spent hours looking at the purses and noticed I kept liking purses by the same brand. I narrowed it down to 3 purses, then finally down to 2. One purse I cut because it didn't have as many outter pockets as the other, and the other because it was slightly smaller. The purse I decided on came in 2 colors, a tan and a reddish orange color. I couldn't decide which I preferred more, I was drawn to the red one but was wondering if I would regret not getting the more neutral tan one later on. I texted my brother and sister for their opinions and they said go for the red one.

Final choice in both colors.

Final choice is a red leather Tignanello purse and I'm in love!
